Ingredients
-1 butternut squash (peeled & cubed)
-1 cup cheddar cheese
-1 cup low-sodium chicken stock
-1/2 tsp garlic powder or to taste
-salt and pepper to taste
Directions
-Cover cubed butternut squash with lightly salted water in pot
-Boil squash until pierced easily with fork (about 10 mins)
-Drain squash and add to blender with stock, cheese, garlic powder, and
salt/pepper to taste
-Blend until smooth
