Ingredients

-1 cup raw quinoa
-1 chopped red bell pepper
- 1 cup chopped cherry tomatoes
- 1/2 cup chopped onion
-2 chopped jalapeno
- 1 cup grilled corn
-1/2-1 can low sodium black beans (drained and rinsed)
-1 tsp of each or to taste of salt, pepper, cayenne, and cumin.
- 1/2 cup chopped cilantro
-lime juice

Directions

-Start by cooking your quinoa according to directions on package (for added flavor cook in veggie broth)
-When quinoa is done add to a large bowl. Also add black beans, pepper, tomatoes and cilantro.
- Add 1-2 tsp of oil oil to a pan and add oinion, jalepeno, garlic. Sauteed about 2 mins.
-Add grilled corn.
-Season with salt, pepper, cayenne, and cumin. Cook till just soft.
-Add cooked veggies to quinoa bowl and stir.
-Add extra cilantro or fresh limes/lime juice for extra flavor.
