Ingredients
2 cups cottage cheese
4 eggs
1 tsp vanilla extract
3 tbsp maple syrup
1 1/4 tbsp baking powder
1 1/4 cups flour
1/2 cup milk
spray oil, butter or coconut oil for coating pan.
Directions
Combine all ingredients in a large bowl together (feel free to blend your cottage cheese before if you do not like the texture)
Stir well to combine
Heat a large nonstick pan over medium heat and spray with nonstick cooking spray, butter or coconut oil.
Allow each side to cook until golden brown (usually about 3 minutes on each side).
Serve with fresh berries and Greek yogurt.
