Zucchini Lasagna

3-4 large zucchini sliced with mandolin.
1 jar no added sugar marinara sauce (can also use Mighty Health Marinara Sauce recipe)
15oz ricotta cheese or cottage cheese
1 cup diced mushrooms
1 red bell pepper diced
1 1/2 cups shredded mozzarella cheese


Preheat oven to 450 degrees
Layer ingredients in an 8x8 baking dish. You should have 3-4 layers (Marinara sauce, zucchini, ricotta or cottage cheese, vegetables, shredded cheese)
Bake 40-50 minutes.

note: this will be a bit more watery than normal lasagna. You can use a spoon to drain any excess after its done.

Protein option: you can add ground beef or chicken to this recipe. Pre cook meat and add to the layering process.
